The association was formed in 2005 as a local movement created from the premises of the international organization Slow Food. Is strongly linked to food producing communities, ie, connects and unites farmers, fishermen, farmers, bakers and small craftsmen chefs, food professionals, chefs, agronomists, scientists and responsible consumers, which call coproducers.

We propose 'ecogastronomía' as a means to unite and protect local food culture ecology of the earth, through the production of local food, artisans, organic and fair trade good, clean and fair. All this celebrating its taste and quality, promoting the defense of biodiversity and the preservation of local food rural and marine. The producer is the main protagonist of a new food. Cooks (network Km0 restaurants) play a crucial role: they are the interpreters of a territory, which are valued using their creativity.

Barcelona Slow Food is a non-profit, independent, non political inclination. Is configured for a heterogeneous group of people with different skills a close relationship with food: artisan producers, farmers, fishermen, bakers, agronomists, scientists, chefs, creatives, educators, journalists, archivists ... All with one common denominator: Consumers are responsible.

Slow Food Barcelona in 2006 was registered in the register of associations of the Generalitat of Catalonia.
